This English Breakfast Skillet is a hearty, one-pan dish inspired by the classic full English breakfast. Featuring crispy bacon, savory sausage, fried eggs, sautéed mushrooms, tomatoes, and crispy potatoes, this easy skillet meal brings all the flavors of a traditional British fry-up into a simple, delicious breakfast. For the Skillet:
- 4 strips bacon
- 4 breakfast sausages (pork or beef)
- 1 tbsp butter or olive oil
- 1 small onion, diced
- 1 cup baby potatoes, diced
- 1/2 cup mushrooms, sliced
- 1/2 cup cherry tomatoes, halved
- 1 cup baked beans (canned, warmed)
- 4 eggs
- Salt and black pepper to taste
- 1 tsp paprika (optional, for extra flavor)
- 1 tbsp fresh parsley, chopped
For Serving (Optional):
- Toast or buttered bread
- HP Sauce or ketchup
Instructions
1. Cook the Bacon & Sausages:
- Heat a large cast-iron skillet over medium heat.
- Cook bacon until crispy, then remove and set aside.
- In the same pan, cook sausages until browned and cooked through (about 8 minutes), then remove.
2. Cook the Potatoes & Veggies:
- In the same pan, melt butter and sauté onions and potatoes until golden and crispy (about 10 minutes).
- Add mushrooms and cherry tomatoes, cooking for another 3 minutes.
- Season with salt, black pepper, and paprika.
3. Add the Eggs:
- Make small wells in the skillet and crack in the eggs.
- Cover with a lid and cook until the egg whites are set but yolks are still runny (about 3-4 minutes).
4. Assemble & Serve:
- Add the baked beans, crispy bacon, and sausages back to the skillet.
- Sprinkle with fresh parsley and serve hot with toast and HP sauce.
