1️⃣ In a large pot, cook soaked wheat berries with 6 cups of water over medium heat until soft (about 45 minutes).
2️⃣ Add rice, chickpeas, and white beans, then continue simmering for 10–15 minutes until the mixture thickens.
3️⃣ Stir in sugar, dried apricots, raisins, figs, chopped nuts, cinnamon, cloves, and orange zest. Let simmer for another 15 minutes, stirring occasionally.
4️⃣ Add rose water (if using) and mix well. Let the pudding thicken slightly but remain creamy.
5️⃣ Pour into serving bowls and allow to cool at room temperature or in the refrigerator.
6️⃣ Garnish with almonds, walnuts, cinnamon, and pomegranate seeds before serving.
Notes
- You can adjust the sweetness by adding more or less sugar.
- If you prefer a thicker consistency, let the pudding simmer longer.
- For extra creaminess, add a splash of milk or coconut milk while cooking.
