1️⃣ Finely chop tomatoes, bell peppers, onion, and parsley. For a smoother texture, use a food processor and pulse a few times.
2️⃣ In a large mixing bowl, combine all the chopped ingredients.
3️⃣ In a separate small bowl, whisk together tomato paste, red pepper paste, lemon juice, pomegranate molasses, dried mint, sumac, chili flakes, olive oil, salt, and black pepper until well blended.
4️⃣ Pour the sauce over the chopped vegetables and mix thoroughly.
5️⃣ Cover and let it sit for at least 30 minutes to allow the flavors to meld together.
6️⃣ Serve chilled or at room temperature with warm pita bread, kebabs, or grilled meats.
