- 4 oz feta cheese, crumbled
- 1/3 cup shredded mozzarella

- 1 cup self-rising flour (add more if needed)
Instructions
1. Preheat the Oven:
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper or lightly grease it.
2. Prepare the Spinach Mixture:
- In a large bowl, mix together chopped spinach, dill, and scallions.
- Season with salt and pepper.
- Stir in crumbled feta and shredded mozzarella.
3. Mix the Wet Ingredients:
- In a separate bowl, whisk together egg, olive oil, and Greek yogurt until smooth.
4. Combine Wet & Dry Ingredients:
- Gradually mix the wet ingredients into the spinach mixture, stirring well.
- Slowly fold in the self-rising flour, mixing until a soft dough forms. (Adjust with extra flour or yogurt if needed.)
5. Shape the Cookies:
- Scoop out small portions of the dough (about walnut-sized) and roll into balls.
- Place on the prepared baking sheet, leaving 2 inches between each.
- Gently press each ball down to slightly flatten.
6. Bake:
- Bake for 15-18 minutes, or until golden brown and slightly crispy on the edges.
7. Cool & Serve:
- Let cool for a few minutes on the baking sheet before transferring to a wire rack.
