These Spinach and Feta Spanakopita Cookies are a savory twist on the classic Greek dish! Wet Ingredients:

  • 1 egg, lightly beaten
  • 4 tbsp olive oil (or melted ghee)
  • 1/4 cup Greek yogurt

Vegetables & Herbs:

  • 1 1/2 cups baby spinach, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tbsp scallions, chopped
  • Salt and pepper, to taste

Cheese:

  • 4 oz feta cheese, crumbled
  • 1/3 cup shredded mozzarella

Dry Ingredients:

  • 1 cup self-rising flour (add more if needed)

Instructions

1. Preheat the Oven:

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or lightly grease it.

2. Prepare the Spinach Mixture:

  1. In a large bowl, mix together chopped spinach, dill, and scallions.
  2. Season with salt and pepper.
  3. Stir in crumbled feta and shredded mozzarella.

3. Mix the Wet Ingredients:

  1. In a separate bowl, whisk together egg, olive oil, and Greek yogurt until smooth.

4. Combine Wet & Dry Ingredients:

  1. Gradually mix the wet ingredients into the spinach mixture, stirring well.
  2. Slowly fold in the self-rising flour, mixing until a soft dough forms. (Adjust with extra flour or yogurt if needed.)

5. Shape the Cookies:

  1. Scoop out small portions of the dough (about walnut-sized) and roll into balls.
  2. Place on the prepared baking sheet, leaving 2 inches between each.
  3. Gently press each ball down to slightly flatten.

6. Bake:

  1. Bake for 15-18 minutes, or until golden brown and slightly crispy on the edges.

7. Cool & Serve:

  1. Let cool for a few minutes on the baking sheet before transferring to a wire rack.
  2. Serve warm or at room temperature as a snack, appetizer, or breakfast treat!
