Ingredients

Units Scale

Meat:

  • 2 1/2 lbs boneless, skinless chicken breasts

Produce:

  • Fresh parsley (chopped, for garnish)

Canned Goods:

  • 10 1/4 oz cream of chicken soup
  • 1 cup low-sodium chicken broth

Baking & Spices:

Other:

  • Cooked rice or mashed potatoes (for serving)

Instructions

Prepare the Slow Cooker:

  1. Layer the Chicken:
    • Place the chicken breasts in the bottom of the slow cooker.
  2. Mix the Gravy:
    • In a medium bowl, whisk together the cream of chicken soup, chicken broth, chicken gravy mix, kosher salt, and black pepper until smooth.

Cook the Chicken:

  1. Add the Gravy:
    • Pour the gravy mixture over the chicken breasts, ensuring they are fully covered.
  2. Slow Cook:
    • Cover and cook on low for 4–5 hours or high for 2–3 hours, until the chicken is tender and easily shredded with a fork.

Finish the Gravy:

  1. Stir in Sour Cream:
    • Remove the chicken breasts from the slow cooker and set aside. Whisk the sour cream into the gravy until smooth and creamy.
  2. Shred the Chicken:
    • Shred the chicken using two forks and return it to the slow cooker. Stir to coat the chicken in the gravy.

Serve:

  1. Plate and Garnish:
    • Serve the chicken and gravy over mashed potatoes or rice. Garnish with fresh parsley for added flavor and color.

Notes

  • For extra flavor, add a pinch of garlic powder or paprika to the gravy mixture.
  • Use chicken thighs for a juicier alternative to chicken breasts.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
