  • 1/2 cup milk

Instructions

1. Prepare the Sloppy Joe Mixture:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until fully browned. Drain any excess grease.
  3. Add the sloppy joe sauce and thawed corn to the skillet. Stir well and simmer for 5 minutes. Remove from heat.

2. Make the Cornbread Batter:

  1. In a medium mixing bowl, combine the Jiffy cornbread mix, eggs, and milk. Stir until just combined (don’t overmix).

3. Assemble the Bake:

  1. Grease a 9×13-inch baking dish. Spread half of the cornbread batter evenly on the bottom of the dish.
  2. Spoon the sloppy joe mixture over the cornbread layer, spreading it evenly.
  3. Sprinkle 1 cup of shredded cheese over the meat mixture.
  4. Spread the remaining cornbread batter on top and sprinkle with the remaining 1 cup of cheese.

4. Bake:

  1. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden and fully cooked (a toothpick inserted into the top layer should come out clean).

5. Serve:

  1. Let the bake cool for 5 minutes before slicing and serving. Pair with a side salad or steamed veggies for a complete meal!
