- 1 box Jiffy cornbread mix

- 2 cups shredded cheese (cheddar or your favorite blend)
Instructions
1. Prepare the Sloppy Joe Mixture:
- Preheat the oven to 375°F (190°C).

2. Make the Cornbread Batter:
- In a medium mixing bowl, combine the Jiffy cornbread mix, eggs, and milk. Stir until just combined (don’t overmix).
3. Assemble the Bake:
- Grease a 9×13-inch baking dish. Spread half of the cornbread batter evenly on the bottom of the dish.
- Spoon the sloppy joe mixture over the cornbread layer, spreading it evenly.
- Sprinkle 1 cup of shredded cheese over the meat mixture.
- Spread the remaining cornbread batter on top and sprinkle with the remaining 1 cup of cheese.
4. Bake:
- Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden and fully cooked (a toothpick inserted into the top layer should come out clean).
5. Serve:
- Let the bake cool for 5 minutes before slicing and serving. Pair with a side salad or steamed veggies for a complete meal!
