Instructions
- Preheat the Oven:
- Preheat your oven to 400ºF (204ºC). Grease a 9×13-inch baking dish.
- Prepare the Cornbread Mixture:
- In a large bowl, combine the cornbread mix, eggs, milk, corn, and 1 cup of shredded cheese. Mix until well combined.
- Par-Bake the Cornbread:
- Spread the cornbread mixture evenly into the prepared baking dish. Bake for 20 minutes, or until lightly set but not fully cooked.
- Cook the Sloppy Joe Mixture:
- While the cornbread bakes, brown the ground beef in a skillet over medium heat. Drain any excess grease, then stir in the sloppy joe sauce. Simmer for 5–10 minutes.
- Assemble the Bake:
- Remove the par-baked cornbread from the oven. Spoon the sloppy joe mixture evenly over the top. Sprinkle with the remaining 1 cup of shredded cheese.
- Finish Baking:
- Return the dish to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.
