Description

Enjoy a hearty and family-friendly Sloppy Joe Cornbread Bake that’s easy to prepare and irresistibly delicious. With layers of cornbread, cheesy goodness, and classic sloppy joe filling, this dish is a guaranteed hit for weeknight dinners or casual gatherings.

Ingredients

Scale
  • 1 box JIFFY Cornbread Mix
  • 2 eggs
  • 1/2 cup milk
  • 2 cups corn (frozen, canned, or cream style)
  • 2 cups shredded cheese (divided)
  • 1 to 1.5 lbs ground beef
  • 1 can sloppy joe sauce

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400ºF (204ºC). Grease a 9×13-inch baking dish.
  2. Prepare the Cornbread Mixture:
    • In a large bowl, combine the cornbread mix, eggs, milk, corn, and 1 cup of shredded cheese. Mix until well combined.
  3. Par-Bake the Cornbread:
    • Spread the cornbread mixture evenly into the prepared baking dish. Bake for 20 minutes, or until lightly set but not fully cooked.
  4. Cook the Sloppy Joe Mixture:
    • While the cornbread bakes, brown the ground beef in a skillet over medium heat. Drain any excess grease, then stir in the sloppy joe sauce. Simmer for 5–10 minutes.
  5. Assemble the Bake:
    • Remove the par-baked cornbread from the oven. Spoon the sloppy joe mixture evenly over the top. Sprinkle with the remaining 1 cup of shredded cheese.
  6. Finish Baking:
    • Return the dish to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Let cool slightly, then cut into squares and serve warm. Enjoy!

Notes

  • Swap ground beef with ground turkey or plant-based meat for a variation.
  • Add diced bell peppers or onions to the sloppy joe mixture for extra flavor and texture.
  • Leftovers can be stored in the refrigerator for up to 3 days.
