Instructions
Roast the Bell Peppers:
- Preheat oven to 425°F (220°C).
- Toss sliced bell peppers with olive oil, salt, black pepper, and oregano.
- Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until soft and slightly charred.

- In a small bowl, whisk together red wine vinegar, garlic, and honey (if using).

- Let the roasted peppers cool slightly, then transfer to a serving bowl.
