Description

This Roasted Bell Pepper & Feta Salad is a vibrant, Mediterranean-inspired dish featuring sweet roasted peppers, tangy feta cheese, and a zesty red wine vinegar dressing.   • Salt & black pepper to taste
  • 1 tsp dried oregano
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1/2 tsp honey (optional)
  • Fresh parsley or basil (for garnish)

Instructions

Roast the Bell Peppers:

  • Preheat oven to 425°F (220°C).
  • Toss sliced bell peppers with olive oil, salt, black pepper, and oregano.
  • Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until soft and slightly charred.

2. Make the Dressing:

  • In a small bowl, whisk together red wine vinegar, garlic, and honey (if using).

3. Assemble the Salad:

  • Let the roasted peppers cool slightly, then transfer to a serving bowl.
  • Add feta cheese and fresh parsley.
  • Drizzle with the dressing and toss gently to combine.
