Description

Riz Bi Haleeb is a creamy, comforting Middle Eastern rice pudding infused with delicate floral flavors from rose water and a hint of cinnamon. This slow-cooked dessert is rich, aromatic, and perfect for serving warm or chilled. Topped with chopped almonds, cinnamon, and fresh mint, it’s a simple yet indulgent treat for Ramadan, Eid, or any cozy occasion.


Ingredients

  • 1/2 cup short-grain rice
  • 2 cups whole milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon rose water or orange blossom water
  • 1/4 cup chopped almonds (for garnish)
  • Cinnamon sticks & fresh mint (for garnish)

Instructions

1. Cook the Rice:

  1. Rinse the rice under cold water until the water runs clear.
  2. In a saucepan, combine rice and 1 cup of water.
  3. Bring to a boil, then reduce heat and simmer until the water is mostly absorbed.

2. Add Milk & Flavoring:

  1. Pour in milk and sugar, stirring continuously over medium heat.
  2. Cook for about 15-20 minutes, stirring frequently, until the mixture thickens.
  3. Stir in vanilla extract, cinnamon, and rose water.

3. Chill & Serve:

  1. Pour into serving glasses or bowls and let cool.
  2. Garnish with chopped almonds, a sprinkle of cinnamon, and a fresh mint leaf.
  3. Serve warm or chilled for a refreshing, aromatic treat!

Notes

  • Use short-grain rice like Arborio for a creamier texture.
  • Adjust sweetness by adding more or less sugar to taste.
  • Stir constantly while cooking to prevent sticking and ensure a smooth pudding.
  • For extra richness, replace ½ cup of milk with heavy cream.
