These Rice Krispie Treats are soft, chewy, and packed with gooey marshmallow goodness! Made with fresh butter, fluffy mini marshmallows, and a touch of vanilla, this easy no-bake dessert is a childhood favorite that’s perfect for snacks, parties, or lunchbox treats!

- 6 tablespoons salted butter
- 1 (16 oz) bag mini marshmallows, divided
- 1 teaspoon pure vanilla extract
- 6 cups Rice Krispies cereal
Instructions
Step 1: Melt the Butter & Marshmallows
- In a large saucepan, melt butter over low heat.
- Add ¾ of the marshmallows (reserving the rest) and stir continuously until melted and smooth.
- Stir in vanilla extract and remove from heat.
Step 2: Mix in Cereal
- Gently fold in Rice Krispies cereal and remaining mini marshmallows, stirring until evenly coated.
Step 3: Shape & Set
- Transfer the mixture to a greased 9×9-inch baking pan.
- Use a greased spatula or wax paper to press the mixture into an even layer (don’t press too hard or they’ll become dense).
- Let cool at room temperature for 1 hour before slicing into bars.
Notes
- Want extra gooey treats? Add ½ cup extra mini marshmallows before mixing.
- For a chocolate twist, drizzle with melted chocolate or mix in chocolate chips.
- Make them festive by adding sprinkles, M&Ms, or crushed Oreos!
