  • 1 cup fresh raspberries, puréed and strained
  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 3 tablespoons liquid fruit pectin
  • 1 tablespoon lemon juice
  • Extra sugar for coating (optional)

Instructions

Step 1: Prepare the Raspberry Purée

  1. Blend fresh raspberries in a blender or food processor until smooth.
  2. Strain through a fine mesh sieve to remove seeds, collecting the purée in a bowl.

Step 2: Cook the Gummy Mixture

  1. In a medium saucepan, combine raspberry purée, sugar, and water over medium heat. Stir until sugar dissolves.
  2. Bring the mixture to a gentle simmer, stirring frequently.
  3. Add lemon juice and fruit pectin, stirring constantly for 2-3 minutes until slightly thickened.

Step 3: Set the Gummies

  1. Pour the mixture into a small baking dish lined with parchment paper.
  2. Let cool at room temperature for 30 minutes, then transfer to the fridge to set for at least 2 hours.

Step 4: Cut & Coat (Optional)

  1. Once set, remove from the dish and cut into small squares or shapes using a knife or cookie cutter.
  2. If desired, roll in extra sugar for a sweet, crystalized finish.

  • Want firmer gummies? Add 1-2 extra tablespoons of pectin.
