- 3/4 cup granulated sugar
- 1/4 cup water
- 3 tablespoons liquid fruit pectin
- 1 tablespoon lemon juice
- Extra sugar for coating (optional)
Instructions
Step 1: Prepare the Raspberry Purée
- Blend fresh raspberries in a blender or food processor until smooth.
- Strain through a fine mesh sieve to remove seeds, collecting the purée in a bowl.
Step 2: Cook the Gummy Mixture
- In a medium saucepan, combine raspberry purée, sugar, and water over medium heat. Stir until sugar dissolves.
- Bring the mixture to a gentle simmer, stirring frequently.
- Add lemon juice and fruit pectin, stirring constantly for 2-3 minutes until slightly thickened.
Step 3: Set the Gummies
- Pour the mixture into a small baking dish lined with parchment paper.
- Let cool at room temperature for 30 minutes, then transfer to the fridge to set for at least 2 hours.
Step 4: Cut & Coat (Optional)
- Once set, remove from the dish and cut into small squares or shapes using a knife or cookie cutter.
- If desired, roll in extra sugar for a sweet, crystalized finish.

- Want firmer gummies? Add 1-2 extra tablespoons of pectin.
- Prefer a different fruit? Swap raspberries for strawberries, blueberries, or blackberries.
