For the Peanut Butter Crust:
- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 6 tablespoons cold butter, cubed
- 1/4 cup peanut butter
- 2–3 tablespoons ice water
For the Peanut Pie Filling:
- 3/4 cup light corn syrup
- 3/4 cup brown sugar
- 3 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
- 1/2 teaspoon salt
- 1 cup roasted peanuts

Prepare the Peanut Butter Crust:
- In a food processor, pulse together the flour, powdered sugar, and salt.
- Add the cold butter and peanut butter, pulsing until the mixture becomes crumbly.
- Gradually add ice water, one tablespoon at a time, pulsing until the dough just holds together.

Chill & Roll the Dough:
- Shape the dough into a disk, wrap in plastic, and chill for 30 minutes.
- On a lightly floured surface, roll out the dough and press it into a 9-inch pie pan.
- Preheat the oven to 350°F (175°C).

Make the Peanut Pie Filling:
- In a mixing bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, vanilla extract, peanut butter, and salt until smooth.
- Stir in half of the roasted peanuts.

Assemble & Bake:
- Pour the filling into the prepared crust and sprinkle the remaining roasted peanuts on top.
- Bake for 45-50 minutes, or until the filling is set and slightly puffed.

- Let the pie cool completely before slicing.
- Serve with whipped cream or a drizzle of chocolate for an extra indulgent touch.
