  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 6 tablespoons cold butter, cubed
  • 1/4 cup peanut butter
  • 23 tablespoons ice water

For the Peanut Pie Filling:

  • 3/4 cup light corn syrup
  • 3/4 cup brown sugar
  • 3 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup creamy peanut butter
  • 1/2 teaspoon salt
  • 1 cup roasted peanuts

Instructions

  • Prepare the Peanut Butter Crust:

    • In a food processor, pulse together the flour, powdered sugar, and salt.
    • Add the cold butter and peanut butter, pulsing until the mixture becomes crumbly.
    • Gradually add ice water, one tablespoon at a time, pulsing until the dough just holds together.
  • Chill & Roll the Dough:

    • Shape the dough into a disk, wrap in plastic, and chill for 30 minutes.
    • On a lightly floured surface, roll out the dough and press it into a 9-inch pie pan.
    • Preheat the oven to 350°F (175°C).
  • Make the Peanut Pie Filling:

    • In a mixing bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, vanilla extract, peanut butter, and salt until smooth.
    • Stir in half of the roasted peanuts.
  • Assemble & Bake:

    • Pour the filling into the prepared crust and sprinkle the remaining roasted peanuts on top.
    • Bake for 45-50 minutes, or until the filling is set and slightly puffed.
  • Cool & Serve:

    • Let the pie cool completely before slicing.
    • Serve with whipped cream or a drizzle of chocolate for an extra indulgent touch.
