Ingredients

Units Scale

Meat:

  • 1 rotisserie chicken (shredded, about 34 cups)
  • 2 (10.5 oz) cans cream of chicken condensed soup

Produce:

  • 5 garlic cloves (minced)
  • 1 tsp dried parsley

Canned Goods:

  • 1 1/2 cups chicken broth

Baking & Spices:

  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Dairy:

  • 1/4 cup butter
  • 1 (8 oz) block cream cheese (softened)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Sauce:
    • In a large oven-safe skillet, melt the butter over medium heat.
    • Add minced garlic and sauté for 1–2 minutes until fragrant. Stir in the cream of chicken soup, chicken broth, sour cream, cream cheese, Italian seasoning, parsley, and black pepper. Cook until the sauce is smooth and bubbly, about 5 minutes.
  3. Add Chicken and Pasta:
    • Stir in the shredded rotisserie chicken. Add cooked pasta (such as spaghetti or linguine) to the skillet, tossing to coat evenly with the sauce.
  4. Top with Cheese:
    • Sprinkle the mozzarella, cheddar, and Parmesan cheeses evenly over the top of the pasta mixture.
  5. Bake:
    • Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the cheese is melted and golden brown.
  6. Serve:
    • Remove from the oven and let rest for a few minutes before serving. Garnish with additional parsley if desired.

Notes

  • For extra texture, sprinkle breadcrumbs or crushed crackers on top before baking.
  • Substitute rotisserie chicken with leftover cooked chicken or turkey.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
