- 2 cups baby spinach, chopped
- 1/2 cup small pasta (orzo, ditalini, or shells)

Instructions
. Cook the Chicken
- Heat olive oil in a large pot over medium heat.
- Add diced chicken, season with salt, pepper, Italian seasoning, and paprika, and cook for 5-6 minutes, until golden brown. Remove from the pot and set aside.
2. Sauté the Aromatics
- In the same pot, add onion and garlic, cooking for 2-3 minutes until fragrant.
- Stir in sun-dried tomatoes and cook for another 1 minute.
3. Build the Broth & Cook the Pasta
- Pour in chicken broth and bring to a boil. Stir in pasta and cook for 8-10 minutes, or until al dente.
4. Make it Creamy & Add the Spinach
- Reduce heat to low, then stir in heavy cream, parmesan cheese, and red pepper flakes. Let simmer for 2-3 minutes until creamy.
- Add baby spinach and cooked chicken, stirring until wilted.
