  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 2 cups baby spinach, chopped
  • 1/2 cup small pasta (orzo, ditalini, or shells)

For Garnish:

  • Fresh basil or parsley, chopped
  • Extra parmesan cheese

Instructions

. Cook the Chicken

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken, season with salt, pepper, Italian seasoning, and paprika, and cook for 5-6 minutes, until golden brown. Remove from the pot and set aside.

2. Sauté the Aromatics

  1. In the same pot, add onion and garlic, cooking for 2-3 minutes until fragrant.
  2. Stir in sun-dried tomatoes and cook for another 1 minute.

3. Build the Broth & Cook the Pasta

  1. Pour in chicken broth and bring to a boil. Stir in pasta and cook for 8-10 minutes, or until al dente.

4. Make it Creamy & Add the Spinach

  1. Reduce heat to low, then stir in heavy cream, parmesan cheese, and red pepper flakes. Let simmer for 2-3 minutes until creamy.
  2. Add baby spinach and cooked chicken, stirring until wilted.

5. Serve & Enjoy

  1. Ladle into bowls and garnish with fresh basil or parsley and extra parmesan cheese. Enjoy warm!
