Description

These Lemon Blueberry Donuts are soft, fluffy, and bursting with fresh blueberries and zesty lemon flavor. Baked instead of fried, they offer a lighter alternative to traditional donuts while still delivering a deliciously moist and tender texture. Perfect for breakfast, brunch, or an afternoon treat!

Ingredients

Units Scale
  • 1 1/2 cups All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Buttermilk (or milk + 1/2 tsp vinegar)
  • 2 tablespoons Unsalted Butter, melted
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Lemon Juice
  • 3/4 cup Fresh or Frozen Blueberries (if frozen, do not thaw)

For the Lemon Glaze

  • 1 cup Powdered Sugar
  • 2 tablespoons Lemon Juice
  • 1/2 teaspoon Vanilla Extract

Instructions

Make the Donut Batter

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the buttermilk, melted butter, egg, vanilla extract, lemon zest, and lemon juice until combined.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined (do not overmix).
  5. Gently fold in the blueberries.

Bake the Donuts

  1. Spoon or pipe the batter into the prepared donut pan, filling each mold about ¾ full.
  2. Bake for 12-15 minutes, or until the donuts are lightly golden and spring back when touched.
  3. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Prepare the Lemon Glaze

  1. In a bowl, whisk together the powdered sugar, lemon juice, and vanilla extract until smooth.
  2. Once the donuts are cooled, dip each one into the glaze or drizzle it over the top.
  3. Let the glaze set before serving.

Notes

  • For Extra Lemon Flavor: Add an extra teaspoon of lemon zest to the batter.
  • Frozen Blueberries: Toss them in a little flour before adding to prevent sinking.
  • Storage: Store in an airtight container for up to 3 days or freeze for later.
