For the Lemon Glaze
- 1 cup Powdered Sugar
- 2 tablespoons Lemon Juice
- 1/2 teaspoon Vanilla Extract
Instructions
Make the Donut Batter
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the buttermilk, melted butter, egg, vanilla extract, lemon zest, and lemon juice until combined.
- Gradually mix the wet ingredients into the dry ingredients until just combined (do not overmix).
- Gently fold in the blueberries.
Bake the Donuts
- Spoon or pipe the batter into the prepared donut pan, filling each mold about ¾ full.
- Bake for 12-15 minutes, or until the donuts are lightly golden and spring back when touched.
- Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Prepare the Lemon Glaze
- In a bowl, whisk together the powdered sugar, lemon juice, and vanilla extract until smooth.
- Once the donuts are cooled, dip each one into the glaze or drizzle it over the top.
- Let the glaze set before serving.
