Ingredients

  • 4 cups fresh strawberries (hulled and chopped)
  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  • Cook the Strawberries:
    • In a medium saucepan, combine the strawberries, sugar, and water.
    • Bring to a simmer over medium heat, stirring occasionally.
  • Simmer & Soften:
    • Let the mixture simmer for 20–25 minutes, or until the strawberries break down and the syrup thickens slightly.
  • Strain the Syrup:
    • Remove from heat and strain the mixture through a fine-mesh sieve to remove the strawberry solids.
    • Press gently with a spoon to extract as much syrup as possible.
  • Add Flavoring:
    • Stir in the lemon juice and vanilla extract for enhanced flavor.
  • Cool & Store:
    • Let the syrup cool before transferring to an airtight container or glass bottle.
    • Store in the refrigerator for up to 2 weeks.

Notes

  • For a thicker syrup, return the strained liquid to the saucepan and simmer for an additional 5–10 minutes.
  • Use frozen strawberries if fresh ones aren’t available—just increase the cooking time by a few minutes.
