Enchiladas
- 2 cups enchilada sauce (homemade or store-bought)
- 1 tbsp extra virgin olive oil
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 lb ground turkey
- 1 tbsp chili powder (American spice blend)
- Salt and pepper, to taste
- 1 (7-ounce) can refried beans
- 8 small flour or corn tortillas
- 1 cup shredded cheddar and mozzarella cheese

Instructions
Prepare the Filling
- Preheat Oven: Preheat your oven to 350°F (180°C).
- Cook Aromatics: Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic. Sauté until fragrant, about 2–3 minutes.
- Brown Turkey: Add ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Season the Filling: Add 1/4 cup of enchilada sauce, chili powder, salt, and pepper. Stir well and cook for 1 minute.
- Add Refried Beans: Stir in the refried beans and cook for an additional 1–2 minutes until fully combined.
Assemble the Enchiladas
- Prepare Tortillas: Warm tortillas in the microwave to make them pliable. Spread enchilada sauce on both sides of each tortilla.
- Fill and Roll: Add a scoop of the turkey mixture to the center of each tortilla. Roll it up tightly and place it seam-side down in a greased 9×13-inch baking dish. Repeat with all tortillas.
Bake the Enchiladas
- Top with Sauce and Cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle shredded cheese on top.
- Bake: Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and the sauce is bubbly.
Serve
- Add Toppings: Garnish with chopped cilantro, sour cream, and diced avocado if desired. Serve hot and enjoy!

- Tortilla Options: Both flour and corn tortillas work well, but corn tortillas give a more authentic flavor.
