Ingredients

Units Scale
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz cremini or white mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 cup sour cream
  • 2 tbsp chopped fresh parsley (for garnish)
  • 12 oz egg noodles

Instructions

  1. Cook the Noodles:
    • Bring a large pot of salted water to a boil. Cook egg noodles according to package instructions. Drain and set aside.
  2. Brown the Beef:
    • In a large skillet, heat olive oil over medium-high heat.
    • Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
  3. Sauté the Veggies:
    • Add diced onion and garlic to the skillet. Sauté for 2 minutes until softened.
    • Stir in the sliced mushrooms and cook for another 4-5 minutes until tender.
  4. Make the Sauce:
    • Sprinkle flour over the mixture and stir to coat. Cook for 1 minute.
    • Gradually add beef broth while stirring, then mix in Worcestershire sauce, Dijon mustard, salt, and pepper.
    • Let simmer for 5 minutes, stirring occasionally, until thickened.
  5. Finish with Sour Cream:
    • Reduce heat to low and stir in sour cream until fully combined.
  6. Combine & Serve:
    • Add the cooked egg noodles to the skillet and toss to coat in the sauce.
    • Garnish with fresh parsley and serve immediately!

Notes

  • Substitute ground turkey or chicken for a lighter version.
  • Use Greek yogurt instead of sour cream for a tangier, protein-packed option.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
