Description

Grilled Chicken Caprese combines tender chicken breasts, creamy mozzarella, ripe tomatoes, and fresh basil, finished with a homemade balsamic reduction. A perfect summer grilling recipe bursting with Italian-inspired flavors!

For the Chicken:

  • 4 chicken breasts
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 4 slices mozzarella cheese
  • 4 slices fresh tomato
  • 2 tbsp fresh basil, sliced

For the Balsamic Reduction:

  • 1/2 cup balsamic vinegar
  • 2 tbsp light brown sugar

Instructions

Prepare the Chicken:

  1. Preheat the grill to medium-high heat (about 375°F).
  2. Season both sides of the chicken breasts with Italian seasoning, garlic powder, onion powder, salt, and pepper.

Grill the Chicken:

  1. Lightly oil the grill grates or spray with non-stick cooking spray. Place chicken breasts on the grill.
  2. Cook for about 5-6 minutes per side, or until the chicken is nearly cooked through (internal temperature of 160°F).

Add the Mozzarella:

  1. Top each chicken breast with a slice of mozzarella. Close the grill lid and cook for an additional 1-2 minutes, or until the cheese melts.

Prepare the Balsamic Reduction:

  1. In a small saucepan over medium heat, combine balsamic vinegar and brown sugar. Simmer gently for about 10 minutes, stirring occasionally, until the mixture reduces by half and thickens. Remove from heat and keep warm.

Assemble the Caprese Chicken:

  1. Remove the chicken from the grill and transfer to a serving plate. Top each breast with a slice of tomato and sprinkle with fresh basil.
  2. Drizzle generously with the balsamic reduction.

Serve:

  1. Serve immediately with a side salad, roasted vegetables, or garlic bread for a complete meal.
