Ingredients
Scale
- 8 bone-in chicken thighs
- 4 garlic cloves, minced
- 1 tbsp dried oregano
- 2 tsp dried thyme
- 2 tsp Dijon mustard
- 1/4 cup fresh lemon juice
- 1 tsp freshly ground black pepper
- 2 tsp kosher salt
- 1/3 cup extra-virgin olive oil
Instructions
- Prepare the Marinade:
- In a small bowl, whisk together the garlic, oregano, thyme, Dijon mustard, lemon juice, black pepper, kosher salt, and olive oil.
- Marinate the Chicken:
- Place the chicken thighs in a large zip-top bag or shallow dish.
- Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish with plastic wrap. Marinate in the refrigerator for at least 30 minutes or up to 4 hours for more flavor.
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or line it with parchment paper.
- Bake the Chicken:
- Arrange the marinated chicken thighs in the prepared baking dish in a single layer.
- Pour any remaining marinade over the chicken.
- Bake for 35–40 minutes or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
- Serve:
- Remove the chicken from the oven and let it rest for 5 minutes. Serve with roasted vegetables, a Greek salad, or your favorite side dish.
Notes
- Use fresh lemon juice for the best flavor.
- For extra crispy skin, broil the chicken for 2–3 minutes at the end of the baking time.
- This recipe can also be cooked on the grill for a smoky twist.
