- Mexican-style shredded cheese (about 2 cups)

Instructions
1. Prepare the Filling:
- In a skillet, cook and crumble the ground beef over medium heat. Add taco seasoning (or use store-bought taco-seasoned beef). Set aside.
- Warm the refried beans in a small saucepan or microwave for easier spreading.
2. Assemble the Enchiritos:
- Preheat the oven to 375°F (190°C).
- Spread a layer of refried beans onto the center of each tortilla.
- Add a scoop of the cooked ground beef on top of the beans.
- Sprinkle a small handful of shredded cheese over the beef.
- Roll up the tortillas tightly, folding in the sides as you go, and place them seam-side down in a greased 9×13-inch baking dish.
3. Top and Bake:
- Pour the enchilada sauce evenly over the rolled enchiritos.
- Sprinkle the remaining shredded cheese generously on top.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
4. Garnish and Serve:
- Remove from the oven and let cool for a few minutes.
- Serve the enchiritos with shredded lettuce, pico de gallo, hot sauce, and a dollop of sour cream or Greek yogurt.
Notes
- Tortilla Options: Feel free to use regular flour tortillas if you don’t need low-carb.
- Vegetarian Option: Replace the ground beef with sautéed veggies, black beans, or crumbled plant-based meat.
- Make Ahead: Assemble the enchiritos a day in advance (without the sauce and cheese), refrigerate, and add the toppings just before baking.
