- 1 can red enchilada sauce
- Shredded iceberg lettuce (for topping)
- Pico de gallo (for topping)
- Sour cream or Greek yogurt (for topping)
- Hot sauce (optional)
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- Prepare the Filling:
- In a skillet, cook and season the ground beef with taco seasoning. Heat the refried beans in a small pot or microwave until warm.
- Assemble the Enchiritos:
- Lay a tortilla flat and spread a layer of refried beans, followed by taco-seasoned ground beef and a sprinkle of shredded cheese.
- Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with remaining tortillas.
- Add Sauce and Cheese:
- Once all the tortillas are rolled and arranged in the dish, pat them down gently. Pour the red enchilada sauce evenly over the tortillas.
- Top generously with more shredded cheese.
- Bake:
- Bake in the preheated oven for 25–30 minutes, or until the cheese is melted and bubbly.
- Add Toppings:
- Remove from the oven and let cool for 5 minutes. Top with shredded iceberg lettuce, pico de gallo, sour cream, and hot sauce, if desired.
- Serve and Enjoy:
- Serve warm with your favorite sides like guacamole, rice, or chips.
Notes
- For a spicier kick, mix a bit of hot sauce into the enchilada sauce or use spicy taco seasoning.
- Swap ground beef with ground turkey, chicken, or a plant-based alternative for variety.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or microwave.
