Description

Delight in these flavorful Enchiritos made with Mission Foods Carb Balance Tortillas. Filled with refried beans, taco-seasoned beef, and gooey cheese, then smothered in red enchilada sauce, this easy, low-carb dish is perfect for taco night!

  • 1 lb taco-seasoned ground beef
  • 6 Mission Foods Carb Balance Soft Taco Tortillas
  • 1 can refried beans, heated
  • Mexican-style shredded cheese (divided)
  • 1 can red enchilada sauce
  • Shredded iceberg lettuce (for topping)
  • Pico de gallo (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Hot sauce (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Prepare the Filling:
    • In a skillet, cook and season the ground beef with taco seasoning. Heat the refried beans in a small pot or microwave until warm.
  3. Assemble the Enchiritos:
    • Lay a tortilla flat and spread a layer of refried beans, followed by taco-seasoned ground beef and a sprinkle of shredded cheese.
    • Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with remaining tortillas.
  4. Add Sauce and Cheese:
    • Once all the tortillas are rolled and arranged in the dish, pat them down gently. Pour the red enchilada sauce evenly over the tortillas.
    • Top generously with more shredded cheese.
  5. Bake:
    • Bake in the preheated oven for 25–30 minutes, or until the cheese is melted and bubbly.
  6. Add Toppings:
    • Remove from the oven and let cool for 5 minutes. Top with shredded iceberg lettuce, pico de gallo, sour cream, and hot sauce, if desired.
  7. Serve and Enjoy:
    • Serve warm with your favorite sides like guacamole, rice, or chips.
