For the Casserole:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 4 cups russet potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon dried parsley (optional, for garnish)

Instructions

. Cook the Beef Mixture

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess fat.
  3. Stir in garlic, salt, black pepper, and paprika. Cook for 1 more minute, then remove from heat.

2. Assemble the Casserole

  1. Arrange half of the sliced potatoes in an even layer at the bottom of the baking dish.
  2. Spread half of the cooked beef mixture over the potatoes.
  3. In a bowl, whisk together cream of mushroom soup, milk, garlic powder, and onion powder. Pour half of this mixture over the beef.
  4. Repeat the layers with the remaining potatoes, beef, and soup mixture.

3. Bake & Add Cheese

  1. Cover with foil and bake for 50 minutes, until the potatoes are tender.
  2. Remove foil, sprinkle shredded cheddar cheese over the top, and bake uncovered for an additional 10-15 minutes, until bubbly and golden.
  3. Let cool for 5 minutes, then garnish with dried parsley and serve warm.

Notes

  • Want extra flavor? Swap cream of mushroom soup for cream of cheddar or cream of celery.
  • Make it a full meal! Add a layer of frozen peas, carrots, or green beans between the beef and potatoes.
