- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika (optional)
- 4 cups russet potatoes, thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon dried parsley (optional, for garnish)
Instructions
. Cook the Beef Mixture
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess fat.
- Stir in garlic, salt, black pepper, and paprika. Cook for 1 more minute, then remove from heat.
2. Assemble the Casserole
- Arrange half of the sliced potatoes in an even layer at the bottom of the baking dish.
- Spread half of the cooked beef mixture over the potatoes.
- In a bowl, whisk together cream of mushroom soup, milk, garlic powder, and onion powder. Pour half of this mixture over the beef.
- Repeat the layers with the remaining potatoes, beef, and soup mixture.
3. Bake & Add Cheese
- Cover with foil and bake for 50 minutes, until the potatoes are tender.
- Remove foil, sprinkle shredded cheddar cheese over the top, and bake uncovered for an additional 10-15 minutes, until bubbly and golden.
- Let cool for 5 minutes, then garnish with dried parsley and serve warm.
Notes
- Want extra flavor? Swap cream of mushroom soup for cream of cheddar or cream of celery.
- Make it a full meal! Add a layer of frozen peas, carrots, or green beans between the beef and potatoes.
- For crispy potatoes, broil for the last 2-3 minutes after adding the cheese.
- Leftovers store well in the fridge for up to 3 days and can be reheated in the oven or microwave.
