These Easy Baklava Rolls are a flaky, nutty, and honey-sweetened delight, made with puff pastry, roasted pistachios, and a cinnamon-honey syrup. Perfect for a quick and impressive dessert, these crispy baklava pastries come together in under an hour!

For the Rolls:
- 2 sheets French puff pastry
- 3/4 cup pistachios (salted & roasted, finely chopped)
- 1/4 cup sugar
- 1/4 tsp cinnamon
- 1/4 cup raspberry jam
- 1 large egg (for egg wash)
- 1/3 cup unsalted butter (melted)
For the Honey Syrup:
- 6 tbsp honey
- 1 tbsp fresh lemon juice
- 1/4 cup water
Instructions
Step 1: Preheat & Prepare Pastry
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out puff pastry sheets on a lightly floured surface.
Step 2: Make the Filling
- In a bowl, mix chopped pistachios, sugar, and cinnamon.
- Spread raspberry jam evenly over each puff pastry sheet.
- Sprinkle the nut mixture over the jam.
Step 3: Roll & Bake
- Roll each sheet tightly into a log and slice into 1-inch rolls.
- Place on the prepared baking sheet, brush with egg wash, and bake for 20-25 minutes, until golden brown.
Step 4: Make the Honey Syrup
- In a saucepan, heat honey, lemon juice, and water over medium heat until it slightly thickens (about 5 minutes).
Step 5: Glaze & Serve
- Drizzle warm honey syrup over baked rolls.
- Let them soak for 5-10 minutes, then enjoy!
Notes
- For extra crunch, add chopped walnuts or almonds to the filling.
- Store in an airtight container at room temperature for up to 3 days.
- Best served warm, but can be reheated for a crispy texture.
