- 1/4 cup butter
- 2 cups shredded cheddar cheese
- 2 cups milk (whole milk or 2%)
Instructions
Cook the Pasta:
- Boil the Pasta:
- Bring a large pot of salted water to a boil. Add the gluten-free elbow macaroni and cook according to package instructions. Drain and set aside.
Make the Cheese Sauce:
- Melt the Butter:
- In a large saucepan, melt the butter over medium heat.
- Create the Roux:
- Whisk in the gluten-free flour and cook for 1–2 minutes, stirring constantly, to remove the raw flour taste.

- Gradually pour in the milk, whisking continuously to avoid lumps. Bring the mixture to a simmer and cook until slightly thickened (about 3–4 minutes).
- Add the Cheese:
- Reduce the heat to low and stir in the shredded cheddar cheese. Continue stirring until the cheese is fully melted and the sauce is smooth. Season with salt and black pepper to taste.
Combine and Serve:
- Mix the Pasta and Sauce:
- Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated.
- Serve Hot:
- Serve immediately, garnished with additional shredded cheese or parsley if desired.
