For the Meatloaf:
- 2 lbs ground beef (80/20)
- 1 small onion, finely diced
- 1/2 cup green bell pepper, finely diced (optional)
- 1 cup crushed Ritz crackers (or saltine crackers)
- 3/4 cup shredded sharp cheddar cheese
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley
For the Glaze:
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 tsp mustard
- 1 tsp Worcestershire sauce
Instructions
- Preheat Oven & Prepare Pan:
- Preheat oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix the Meatloaf:
- In a large bowl, combine ground beef, diced onion, green bell pepper, crushed crackers, shredded cheese, eggs, milk, salt, pepper, garlic powder, oregano, and parsley.
- Mix gently until just combined—avoid overmixing to keep it tender.
- Shape & Bake:
- Transfer the mixture to the loaf pan and press it in evenly.
- Bake uncovered for 40 minutes.
- Prepare the Glaze:
- In a small bowl, whisk together ketchup, brown sugar, mustard, and Worcestershire sauce.
- Glaze & Finish Baking:
- Remove meatloaf from the oven after 40 minutes and spread the glaze evenly over the top.
- Return to the oven and bake for another 20 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest & Serve:
- Let the meatloaf rest for 10 minutes before slicing.
- Serve with mashed potatoes, green beans, or cornbread for a classic homestyle meal!
