  • 3/4 cup shredded sharp cheddar cheese
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley

For the Glaze:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tsp mustard
  • 1 tsp Worcestershire sauce

Instructions

  1. Preheat Oven & Prepare Pan:
    • Preheat oven to 350°F (175°C).
    • Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix the Meatloaf:
    • In a large bowl, combine ground beef, diced onion, green bell pepper, crushed crackers, shredded cheese, eggs, milk, salt, pepper, garlic powder, oregano, and parsley.
    • Mix gently until just combined—avoid overmixing to keep it tender.
  3. Shape & Bake:
    • Transfer the mixture to the loaf pan and press it in evenly.
    • Bake uncovered for 40 minutes.
  4. Prepare the Glaze:
    • In a small bowl, whisk together ketchup, brown sugar, mustard, and Worcestershire sauce.
  5. Glaze & Finish Baking:
    • Remove meatloaf from the oven after 40 minutes and spread the glaze evenly over the top.
    • Return to the oven and bake for another 20 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest & Serve:
    • Let the meatloaf rest for 10 minutes before slicing.
    • Serve with mashed potatoes, green beans, or cornbread for a classic homestyle meal!
