Ingredients

Units Scale

Basic Ingredients:

  • 3 large eggs, separated
  • 3 oz cream cheese, softened
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cream of tartar (optional, helps stabilize egg whites)
  • Salt, to taste (optional)

Optional Ingredients (for Flavoring):

  • Savory: Garlic powder, rosemary, thyme, oregano, or grated Parmesan
  • Sweet: Stevia, monk fruit, cinnamon, or vanilla extract

Instructions

Step 1: Preheat & Prepare

  1. Preheat the oven to 300°F (150°C).
  2. Line a baking sheet with parchment paper to prevent sticking.

Step 2: Separate the Eggs

  1. Carefully separate the egg whites from the yolks.
  2. Place the whites in one large mixing bowl and the yolks in another.

Step 3: Whip the Egg Whites

  1. Using a hand mixer, beat the egg whites on medium-high speed until stiff peaks form.
  2. Add cream of tartar to help stabilize the whites.

Step 4: Mix the Yolks & Cream Cheese

  1. In the separate bowl, beat the egg yolks, cream cheese, and baking powder until smooth.
  2. Add any additional seasonings or sweeteners, depending on your preferred flavor.

Step 5: Fold in the Egg Whites

  1. Gently fold the whipped egg whites into the yolk mixture using a spatula.
  2. Be careful not to overmix—keep as much air in the batter as possible for a fluffy texture.

Step 6: Shape & Bake

  1. Scoop the mixture onto the prepared baking sheet, forming 6-8 rounds.
  2. Bake for 25-30 minutes, or until golden brown and firm to the touch.

Step 7: Cool & Serve

  1. Let the cloud bread cool on a wire rack before serving.
  2. Enjoy as a sandwich bun, toast alternative, or a low-carb snack!
