For the Shortbread Base:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (optional)

For the Caramel Layer:

  • 1 cup unsalted butter
  • 1 cup sweetened condensed milk
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/2 tsp salt
  • 1 tsp vanilla extract

For the Chocolate Topping:

  • 12 oz milk chocolate, melted
  • 1/4 cup white chocolate curls (for garnish)
  • Chocolate candies (optional, for topping)

Instructions

  • Prepare the Shortbread Base:

    • Preheat oven to 350°F (175°C).
    • Line an 8×8-inch pan with parchment paper.
    • In a bowl, mix butter and sugar until creamy.
    • Add flour and salt, mixing until crumbly. Stir in chocolate chips, if using.
    • Press into the prepared pan and bake for 20 minutes, or until golden.
    • Let cool completely.
  • Make the Caramel Layer:

    • Melt butter in a saucepan over medium heat.
    • Stir in condensed milk, brown sugar, corn syrup, and salt.
    • Cook, stirring constantly, until thickened and golden (about 10 minutes).
    • Remove from heat, stir in vanilla, and pour over the cooled shortbread.
    • Let set for 30 minutes.
  • Prepare the Chocolate Topping:

    • Melt the milk chocolate and spread evenly over the caramel layer.
    • Sprinkle with white chocolate curls and chocolate candies.
  • Chill & Serve:

    • Refrigerate for 1 hour until firm.
    • Slice into squares and enjoy!

Notes

  • For a crisper caramel, cook for an additional 2-3 minutes.
  • Swap milk chocolate for dark chocolate for a richer flavor.
