Instructions

Make the Crepes:

  1. Prepare the Batter – In a bowl, whisk together flour, cocoa powder, sugar, and salt. In another bowl, whisk eggs, milk, vanilla, and melted butter. Gradually add wet ingredients to dry, whisking until smooth. Let the batter rest for 15-20 minutes.
  2. Cook the Crepes – Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about ¼ cup of batter into the pan, swirling to spread it evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for another 30 seconds. Repeat with remaining batter.

Make the Chocolate Filling:

  1. Heat the Cream – In a saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chocolate and butter. Stir until smooth and glossy. Let it cool slightly.

Assemble the Rolls:

  1. Spread the Filling – Spread a thin layer of chocolate filling over each crepe.
  2. Roll the Crepes – Tightly roll each crepe into a log. Slice in half or into smaller bite-sized rolls if desired.
  3. Garnish & Serve – Dust with powdered sugar, drizzle with more chocolate, and serve with whipped cream and berries.
