Ingredients

Units Scale

Produce:

  • 1 cup fresh strawberries (washed, hulled, and diced)

Refrigerated:

  • 2 large eggs

Baking & Spices:

  • 1 (18.3 oz) box brownie mix
  • 1 (3.9 oz) box chocolate pudding mix
  • 12 oz semi-sweet baking chocolate

Oils & Vinegars:

  • 1/2 cup vegetable oil

Dairy:

  • 2/3 cup whole milk
  • 1 1/2 cups heavy whipping cream
  • 2 tbsp salted butter

Instructions

Make the Brownie Base:

  1. Prepare the Batter:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
    • In a large bowl, combine the brownie mix, chocolate pudding mix, eggs, vegetable oil, and milk. Mix until well blended.
  2. Add Strawberries:
    • Gently fold the diced strawberries into the batter, ensuring even distribution.
  3. Bake:
    • Pour the batter into the prepared baking dish. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.

Prepare the Ganache:

  1. Heat the Cream:
    • In a small saucepan over medium heat, bring the heavy whipping cream to a simmer (do not boil).
  2. Melt the Chocolate:
    • Place the semi-sweet baking chocolate and butter in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 1–2 minutes. Stir until smooth and glossy.
  3. Spread the Ganache:
    • Once the brownies are fully cooled, pour the ganache over the top, spreading it evenly with a spatula.

Set and Serve:

  1. Chill:
    • Refrigerate the brownies for at least 30 minutes to allow the ganache to set.
  2. Slice and Enjoy:
    • Cut into squares and serve. Garnish with additional strawberries, if desired.

Notes

  • For extra flavor, add a teaspoon of vanilla extract or a pinch of espresso powder to the brownie batter.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Swap fresh strawberries for raspberries or other berries for a different twist.
