For the Brownies:
- 18.3 oz box brownie mix
- 3.9 oz box chocolate pudding mix
- 2/3 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
For the Topping:
- 1 cup fresh strawberries (about 1/2 of a 1 lb package), hulled and halved
- 12 oz semi-sweet baking chocolate (3 4-oz bars)
- 1 1/2 cups heavy whipping cream
- 2 tbsp salted butter
Instructions
Make the Brownies:
- Preheat Oven:
- Preheat the oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
- Mix the Batter:
- In a large bowl, combine the brownie mix, pudding mix, milk, vegetable oil, and eggs. Stir or mix until fully combined.
- Bake:
- Pour the batter into the prepared pan, smoothing the top. Bake for 34–37 minutes, or until a toothpick inserted 1 inch from the edge comes out clean.
- Cool Completely:
- Allow the brownies to cool completely in the pan for 30–45 minutes before adding the topping.
Prepare the Topping:
- Add Strawberries:
- Arrange the halved strawberries, flat side down, in an even layer on top of the cooled brownies.
- Make the Ganache:
- Place the chopped semi-sweet chocolate in a heat-safe bowl.
- In a small saucepan, heat the cream and butter over medium heat, stirring until the butter melts. Allow the mixture to bubble slightly around the edges, about 3 minutes.
- Remove from heat and pour the hot cream mixture over the chocolate, ensuring it is fully covered.
- Stir and Set:
- Let the mixture sit for 5 minutes, then stir until smooth and glossy.
- Pour the ganache over the strawberries, tapping the pan gently on the counter to release air bubbles.
- Set the Topping:
- Allow the ganache to set for 90 minutes at room temperature or 30 minutes in the refrigerator.
Serve:
- Cut and Serve:
- Use a sharp, slightly serrated knife or a plastic knife to cut into squares. Serve and enjoy!
Notes
- To Store: Refrigerate the brownies due to the fresh strawberries. They will last 2–3 days if properly covered.
- To Freeze: Wrap brownies individually and freeze for up to 3 months.
- Ensure the brownies are completely cool before adding the strawberries and ganache to allow proper setting.
- For clean cuts, use a sharp or plastic knife.
- Due to the richness of these brownies, smaller servings are ideal.
