Instructions
Prepare the Filling
- Mix Ingredients
- In a large mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and green onions. Mix until well combined.
- Season
- Add salt and pepper to taste.
Assemble the Egg Rolls
- Prepare Egg Roll Wrappers
- Lay one egg roll wrapper on a clean surface with a corner pointing toward you.
- Add Filling
- Place about 2-3 tablespoons of the chicken mixture in the center of the wrapper.
- Roll
- Fold the bottom corner over the filling, then fold in the sides. Roll tightly, sealing the top corner with a bit of beaten egg.
Cook the Egg Rolls
- Fry
- Heat oil in a deep skillet or pot to 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes, turning occasionally, until golden brown. Transfer to a paper towel-lined plate to drain.

Bake
- Preheat the oven to 400°F (200°C). Place egg rolls on a baking sheet lined with parchment paper and brush with oil. Bake for 12-15 minutes, flipping halfway through, until golden and crispy.
