    • 1 cup cheddar cheese, shredded
  • Produce
    • 1/2 cup green onions, finely chopped
  • Condiments
    • Ranch or blue cheese dressing (for dipping)

    • Salt and pepper, to taste
  • Refrigerated
    • 1 egg (for sealing wrappers)
  • Bread & Baked Goods
    • 12 egg roll wrappers
  • Oils & Vinegars
    • Cooking oil (for frying or brushing for baking)

Instructions

Prepare the Filling

  1. Mix Ingredients
    • In a large mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and green onions. Mix until well combined.
  2. Season
    • Add salt and pepper to taste.

Assemble the Egg Rolls

  1. Prepare Egg Roll Wrappers
    • Lay one egg roll wrapper on a clean surface with a corner pointing toward you.
  2. Add Filling
    • Place about 2-3 tablespoons of the chicken mixture in the center of the wrapper.
  3. Roll
    • Fold the bottom corner over the filling, then fold in the sides. Roll tightly, sealing the top corner with a bit of beaten egg.

Cook the Egg Rolls

  1. Fry
    • Heat oil in a deep skillet or pot to 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes, turning occasionally, until golden brown. Transfer to a paper towel-lined plate to drain.

    OR

    Bake

    • Preheat the oven to 400°F (200°C). Place egg rolls on a baking sheet lined with parchment paper and brush with oil. Bake for 12-15 minutes, flipping halfway through, until golden and crispy.

Serve

  1. Dip and Enjoy
    • Serve hot with ranch or blue cheese dressing for dipping.

Notes

  • Make Ahead: Assemble the egg rolls and freeze uncooked for up to 3 months. Fry or bake directly from frozen.
  • Spice Level: Adjust the heat by adding more or less buffalo sauce to taste.
  • Cheese Options: Swap cheddar cheese for mozzarella or pepper jack for a different flavor profile.
