  • 2 carrots, sliced
  • 1/2 cup frozen peas
  • 2 tablespoons curry powder
  • 1 tablespoon tomato paste
  • 2 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste

Instructions

  • Brown the Sausages: Heat olive oil in a large pan over medium heat. Brown the sausages on all sides, then remove and slice into chunks.
  • Sauté the Vegetables: In the same pan, sauté onion and garlic until softened. Add sliced carrots and cook for another 2 minutes.
  • Add the Spices: Stir in curry powder and tomato paste, cooking for 1 minute until fragrant.
  • Make the Curry Sauce: Pour in beef stock, Worcestershire sauce, and sugar. Add the sausages back to the pan and bring to a simmer.
  • Simmer: Cover and cook for 15 minutes. Stir in the peas and cook for another 5 minutes.
  • Thicken the Sauce: Add the cornstarch slurry, stirring until the sauce thickens. Season with salt and pepper to taste.
  • Serve: Enjoy hot over mashed potatoes or rice.
