- 6 beef or pork sausages
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1/2 cup frozen peas
- 2 tablespoons curry powder
- 1 tablespoon tomato paste
- 2 cups beef stock
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sugar
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
Instructions
- Brown the Sausages: Heat olive oil in a large pan over medium heat. Brown the sausages on all sides, then remove and slice into chunks.
- Sauté the Vegetables: In the same pan, sauté onion and garlic until softened. Add sliced carrots and cook for another 2 minutes.
- Add the Spices: Stir in curry powder and tomato paste, cooking for 1 minute until fragrant.
- Make the Curry Sauce: Pour in beef stock, Worcestershire sauce, and sugar. Add the sausages back to the pan and bring to a simmer.
- Simmer: Cover and cook for 15 minutes. Stir in the peas and cook for another 5 minutes.
- Thicken the Sauce: Add the cornstarch slurry, stirring until the sauce thickens. Season with salt and pepper to taste.
- Serve: Enjoy hot over mashed potatoes or rice.
