  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon instant yeast
  • 1 cup warm water (adjust as needed)
  • 2 tablespoons olive oil

For the Zaatar Topping:

  • 1/4 cup zaatar spice mix
  • 1/3 cup olive oil

Instructions

  1. Prepare the Dough:

    • In a large bowl, mix flour, salt, sugar, and instant yeast.
    • Gradually add warm water, kneading until a soft and smooth dough forms.
    • Drizzle with olive oil, cover, and let it rise for 1 hour or until doubled in size.
  2. Make the Zaatar Mixture:

    • In a small bowl, mix zaatar spice blend with olive oil to create a spreadable paste.
  3. Shape the Flatbreads:

    • Preheat oven to 400°F (200°C).
    • Divide the dough into small balls, then roll each into a thin, round shape (about 6 inches in diameter).
  4. Top & Bake:

    • Spread the zaatar mixture evenly over each flatbread.
    • Place on a baking sheet and bake for 10-12 minutes until golden brown and slightly crispy.
  5. Serve & Enjoy:

    • Serve warm with tea, cheese, olives, or fresh vegetables.
