Description

For the Dough:

  • 2 cups all-purpose flour
  • 2 tbsp oil or melted ghee
  • 1/2 tsp salt
  • 1/2 cup water (adjust as needed)

For the Filling:

  • 2 medium potatoes (boiled & mashed)
  • 1/2 cup green peas (boiled)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/2 tsp cumin seeds
  • 1/2 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder (adjust to taste)
  • 1 tsp lemon juice
  • 1 tbsp fresh cilantro (chopped)
  • Salt to taste
  • 1 tbsp oil

For Frying:

  • Oil for deep frying

Instructions

1. Prepare the Dough:

  1. In a mixing bowl, combine flour, salt, and oil/ghee.
  2. Gradually add water, kneading until a firm yet pliable dough forms.
  3. Cover and let it rest for 30 minutes.

2. Make the Filling:

  1. Heat 1 tbsp oil in a pan over medium heat.
  2. Add cumin seeds and let them sizzle, then add onions and garlic. Sauté until soft.
  3. Stir in mashed potatoes, peas, turmeric, chili powder, garam masala, and salt.
  4. Cook for 2-3 minutes, then mix in lemon juice and chopped cilantro. Set aside to cool.

3. Create the Woven Lattice Pattern:

  1. Divide the dough into equal portions and roll out into thin rectangles.
  2. Use a sharp knife or a lattice cutter to create a woven pattern on half of each rectangle.
  3. Place a small amount of filling on the uncut side of the rectangle.
  4. Fold the lattice side over the filling and seal the edges by pressing gently.

4. Fry the Samosas:

  1. Heat oil in a deep pan to 350°F (175°C).
  2. Fry the samosas in batches until they turn golden brown and crispy.
  3. Drain on a paper towel and serve warm.

Notes

  • For a healthier option, bake the samosas at 375°F (190°C) for 25 minutes, flipping halfway.
  • Want extra crispiness? Add 1 tbsp cornstarch to the dough.
  • Serve with mint chutney or tamarind sauce for an extra burst of flavor.
