Description

These Wild Garlic Vegan Scones are crispy on the outside, tender on the inside, and bursting with fresh, aromatic wild garlic! The speckled green flecks add a beautiful visual appeal and a deliciously herby flavor. Their rustic, flaky texture makes them the perfect savory addition to an Easter brunch, springtime gathering, or as a side for soups and salads!


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cold vegan butter (cubed)
  • 1/2 cup plant-based milk (oat, soy, or almond)
  • 1/2 cup fresh wild garlic (finely chopped)
  • 1 teaspoon lemon juice or apple cider vinegar
  • 2 tablespoons nutritional yeast (optional, for extra cheesy flavor)

For Brushing (Optional)

  • 1 tablespoon plant-based milk
  • Extra chopped wild garlic for garnish

Instructions

  1. Preheat & Prepare

    • Preheat oven to 200°C (400°F).
    • Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients

    • In a large bowl, whisk together flour, baking powder, salt, black pepper, and nutritional yeast (if using).
  3. Cut in the Butter

    • Add cold vegan butter and rub it into the flour with your fingers until the mixture resembles coarse crumbs.
  4. Add Wild Garlic & Liquid

    • Stir in chopped wild garlic.
    • Mix plant-based milk and lemon juice in a small bowl (this creates a vegan buttermilk effect).
    • Pour into the dry mixture and mix until just combined.
  5. Shape & Cut

    • Transfer dough onto a floured surface and gently pat into a ¾-inch thick disc.
    • Cut into 6–8 wedges or use a round cutter for traditional scones.
  6. Bake

    • Place scones on the prepared baking sheet.
    • Brush tops with plant-based milk and sprinkle with extra wild garlic.
    • Bake for 15–18 minutes, or until golden brown.
  7. Cool & Serve

    • Let cool for a few minutes before serving warm.

Notes

  • No Wild Garlic? Substitute with chives, green onions, or spinach + minced garlic.
