Description

This Whipped Cottage Cheese Raspberry Dessert is a light, refreshing, and protein-packed sweet treat that’s perfect for clean eating. Blended into a silky-smooth mousse with fresh raspberries, vanilla, and natural sweeteners, it’s a low-carb, high-protein dessert ideal for weight loss plans, keto lifestyles, and guilt-free indulgence. Made with just a handful of wholesome ingredients, this no-bake dessert is ready in minutes and perfect for warm-weather cravings or post-dinner satisfaction.

Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)

  • 1/2 cup fresh raspberries (plus extra for topping)

  • 2 tbsp honey or maple syrup (optional, adjust to taste)

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • 1-2 tbsp milk (only if needed for blending)

  • Optional: powdered sweetener or monk fruit for garnish

Instructions

  • Prepare the base: In a food processor or high-speed blender, combine the cottage cheese, fresh raspberries, honey or maple syrup, vanilla extract, and a pinch of salt.

  • Blend to perfection: Process until the mixture becomes smooth and creamy, scraping down the sides as needed. If it feels too thick or chunky, add 1 tablespoon of milk at a time until your desired mousse-like consistency is reached.

  • Sweetness check: Taste the whipped mixture. If you’d like it sweeter, add a little more honey, maple syrup, or a low-carb powdered sweetener and blend again.

  • Chill and set: Spoon the whipped dessert into individual serving glasses or small bowls. For a firmer, more mousse-like texture, refrigerate for at least 30 minutes.

  • Garnish and serve: Just before serving, top with a few fresh raspberries and a light dusting of powdered sweetener for an elegant touch.

  • Enjoy: Serve chilled and enjoy a guilt-free, protein-rich raspberry dessert that’s low in sugar and full of flavor.

Notes

  • For a keto version, swap honey/maple syrup for a keto-friendly sweetener like erythritol or stevia.

  • Use frozen raspberries if fresh aren’t available—just thaw before blending.

  • This recipe doubles easily for meal prep or serving guests.
