For the Casserole:
- 1 1/2 pounds ground beef
- 1/3 large onion, chopped
- 1 can green chilies (small can)
- 1 can enchilada sauce
- 2 ounces cream cheese
- 1 bag Fritos corn chips
- 1 bag shredded cheese
For Toppings:
- 3/4 cup lettuce, shredded
- 1/2 cup fresh tomato, diced
- 16 ounces salsa
- 8 ounces sour cream
Instructions
1. Prepare the Meat Mixture
- In a skillet, brown the ground beef with the chopped onion over medium heat until fully cooked.
- Stir in the green chilies, enchilada sauce, and cream cheese. Cook until the cream cheese is fully melted and the mixture is creamy.
2. Layer the Casserole
- In a greased 9×13-inch baking dish, create layers in the following order:
- A layer of Fritos corn chips
- A layer of the meat mixture
- A layer of shredded cheese
- Repeat the layers if desired, ending with cheese on top.
3. Bake the Casserole
- Preheat the oven to 350°F (175°C).
- Bake the casserole for 15-20 minutes, or until the cheese is melted and bubbly.
4. Add Toppings and Serve
- Remove the casserole from the oven and let it cool slightly.
- Serve individual portions and top with shredded lettuce, diced tomatoes, salsa, and sour cream, as desired.
