Instructions
- Prepare Sweet Potatoes:
- Microwave sweet potatoes on high for 8–10 minutes until soft, or bake at 400°F (200°C) for 45–50 minutes.
- Cook Ground Beef:
- In a skillet, cook ground beef over medium heat. Add diced onion and minced garlic, sautéing until fragrant. Drain any excess grease.
- Season Beef:
- Stir in the taco seasoning and 1/4 cup water. Cook for 2–3 minutes until the seasoning is fully incorporated.
- Assemble the Sweet Potatoes:
- Slice cooked sweet potatoes lengthwise and gently mash the inside. Fill each potato with seasoned ground beef, followed by salsa, diced tomato, cheese, and avocado or guacamole.
