Description

A refreshing, juicy, and colorful winter salad featuring grapefruit, oranges, kiwi, and pomegranate, topped with fresh mint for a burst of flavor. This vitamin-packed dish is light, hydrating, and perfect for brightening up chilly days!


Ingredients

  • 2 grapefruits, peeled and segmented
  • 2 oranges, peeled and segmented
  • 2 kiwis, peeled and sliced
  • 1/2 cup pomegranate seeds
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp lime zest
  • 1 tbsp fresh lime juice

 

  • 2 tbsp fresh mint leaves, chopped

Instructions

  • Prepare the Citrus – Peel and segment the grapefruits and oranges, removing any excess membrane.
  • Slice the Kiwi – Peel and cut the kiwis into rounds or half-moons.
  • Assemble the Salad – Arrange the citrus segments and kiwi slices on a serving platter.
  • Add Garnishes – Sprinkle with pomegranate seeds, lime zest, and chopped mint.
  • Dress the Salad – Drizzle with honey or maple syrup and a squeeze of lime juice, if desired.

 

  • Serve – Toss gently and serve immediately, or chill for 10 minutes before serving for enhanced flavors.
