For the Filling:
- 1 block firm tofu, crumbled
- 1/2 cup mushrooms, finely chopped
- 1/4 cup onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
For the Pastry:
- 1 sheet vegan puff pastry, thawed
- 1 tbsp plant-based milk (for brushing)
Instructions

Preheat & Prepare Baking Sheet:
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper.

Make the Filling:
- Heat olive oil in a pan over medium heat.
- Sauté onions and garlic until fragrant.
- Add mushrooms and cook for 3-4 minutes until softened.
- Stir in crumbled tofu, soy sauce, smoked paprika, cumin, and black pepper.
- Cook for another 3-5 minutes until the mixture is slightly dry.
- Remove from heat and mix in fresh parsley.

Assemble the Pastries:
- Roll out puff pastry and cut into circles or squares.
- Spoon the filling onto half of the pastry pieces, leaving space around the edges.
- Cover with another piece of pastry and seal the edges by pressing with a fork.

Bake the Pastries:
- Brush the tops with plant-based milk for a golden finish.
- Bake for 20-25 minutes, until crisp and golden brown.
- Let cool slightly before serving.
Notes
- For a cheesy twist, add vegan cheese inside the filling.
- Swap tofu for lentils or mashed chickpeas for a different texture.
- Best enjoyed warm, but can be stored and reheated in the oven.
