Description

Flaky, golden vegan puff pastry, filled with a savory, spiced tofu and mushroom mixture, creating a delicious and satisfying plant-based snack or meal. Perfect for appetizers, lunches, or on-the-go snacks!

For the Filling:

  • 1 block firm tofu, crumbled
  • 1/2 cup mushrooms, finely chopped
  • 1/4 cup onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

For the Pastry:

  • 1 sheet vegan puff pastry, thawed
  • 1 tbsp plant-based milk (for brushing)

Instructions

  • Preheat & Prepare Baking Sheet:

    • Preheat oven to 375°F (190°C).
    • Line a baking sheet with parchment paper.
  • Make the Filling:

    • Heat olive oil in a pan over medium heat.
    • Sauté onions and garlic until fragrant.
    • Add mushrooms and cook for 3-4 minutes until softened.
    • Stir in crumbled tofu, soy sauce, smoked paprika, cumin, and black pepper.
    • Cook for another 3-5 minutes until the mixture is slightly dry.
    • Remove from heat and mix in fresh parsley.
  • Assemble the Pastries:

    • Roll out puff pastry and cut into circles or squares.
    • Spoon the filling onto half of the pastry pieces, leaving space around the edges.
    • Cover with another piece of pastry and seal the edges by pressing with a fork.
  • Bake the Pastries:

    • Brush the tops with plant-based milk for a golden finish.
    • Bake for 20-25 minutes, until crisp and golden brown.
    • Let cool slightly before serving.

Notes

  • For a cheesy twist, add vegan cheese inside the filling.
  • Swap tofu for lentils or mashed chickpeas for a different texture.
  • Best enjoyed warm, but can be stored and reheated in the oven.
