Description
These Vegan Strawberry Sweet Rolls are soft, gooey, and bursting with strawberry flavor! Filled with fresh strawberries, raspberry compote, and strawberry jam, then topped with a creamy vanilla glaze, they’re perfect for Valentine’s Day, Mother’s Day, or any special occasion.

For the Dough
- 400ml dairy-free milk (e.g., almond or oat milk)
- 1 pack active dry yeast
- 100g caster sugar
- 480g plain flour
- 100g dairy-free butter, melted
For the Strawberry Filling
- 100g fresh or frozen raspberries
- 50g fresh strawberries, chopped
- 130g strawberry or raspberry jam
For the Vanilla Cream Cheese Glaze
- 40g dairy-free cream cheese
- 75g dairy-free butter, softened
- 150g icing sugar
- 1 tsp vanilla extract
- 1 tbsp water (adjust as needed)
- 2 tbsp freeze-dried strawberries or raspberries, crushed (optional)
- Pink food gel (optional)
Instructions
1️⃣ Make the Dough
- Warm the milk (not too hot, about 40°C/105°F) and stir in the yeast. Let sit for 5–10 minutes until foamy.
- In a large bowl, whisk together flour and sugar.
- Pour in the yeast mixture and melted butter, then mix until a dough forms.
- Knead the dough for 8–10 minutes until smooth and elastic.
- Cover with a damp cloth and let it rise in a warm place for 1.5–2 hours, or until doubled in size.
2️⃣ Make the Strawberry Filling
- In a saucepan, heat the raspberries, fresh strawberries, and jam over medium heat.
- Stir and mash until it thickens slightly.
- Let cool completely before using.
3️⃣ Assemble the Rolls
- Roll out the risen dough into a large rectangle (about 1cm thick).
- Spread the strawberry filling evenly over the dough.
- Roll it up tightly from the long side and cut into 9 equal rolls.
- Place the rolls in a greased baking dish, cover, and let them rise for 45 minutes.
4️⃣ Bake
- Preheat the oven to 180°C (350°F).
- Brush the tops of the rolls with a little dairy-free milk.
- Bake for 20–25 minutes, until golden brown.
5️⃣ Make the Cream Cheese Glaze
- Beat together dairy-free cream cheese, butter, icing sugar, vanilla extract, and water until smooth.
- Add a touch of pink food gel if desired for a fun color.
6️⃣ Finish & Serve
- Spread the glaze over the warm rolls.
- Sprinkle with freeze-dried strawberries or raspberries.
- Enjoy warm!
Notes
- For an extra fruity kick, add more freeze-dried strawberry powder to the glaze.
- Store in an airtight container for up to 2 days, or reheat in the oven for freshness.
- Want it extra gooey? Drizzle with extra jam before serving!
