For the Dough:
- 2 1/2 cups all-purpose flour
- 1/2 cup sourdough starter (or 1 packet dry yeast)
- 1/2 cup warm almond milk
- 1/4 cup maple syrup or sugar
- 1/4 cup melted coconut oil
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
For the Filling:
- 3/4 cup fruit jam (strawberry, apricot, or raspberry)
For Topping:
- Powdered sugar for dusting
Instructions
1. Prepare the Dough:
- In a bowl, mix flour, sourdough starter (or yeast), warm almond milk, maple syrup, melted coconut oil, salt, and vanilla extract.
- Knead for 8-10 minutes until smooth and elastic.
- Cover and let rise for 2-4 hours (or overnight if using sourdough starter).
2. Shape the Buns:
- Preheat oven to 375°F (190°C). Line a baking pan with parchment paper.
- Divide the dough into 12 equal portions.
- Flatten each piece, add 1 teaspoon of jam in the center, then pinch the edges to seal.
- Place seam-side down on the baking pan, leaving space between them.
3. Bake & Serve:
- Bake for 18-22 minutes, or until golden brown.
- Let cool slightly, then dust with powdered sugar.
- Serve warm and enjoy!

- Swap almond milk for oat or soy milk for different flavors.
- Use chia seed jam for a healthier filling option.
- Best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
