Description

Soft, fluffy, and lightly sweetened vegan buns filled with delicious fruit jam and dusted with powdered sugar—perfect for breakfast, tea time, or a cozy snack!

For the Dough:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup sourdough starter (or 1 packet dry yeast)
  • 1/2 cup warm almond milk
  • 1/4 cup maple syrup or sugar
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For the Filling:

  • 3/4 cup fruit jam (strawberry, apricot, or raspberry)

For Topping:

  • Powdered sugar for dusting

Instructions

1. Prepare the Dough:

  1. In a bowl, mix flour, sourdough starter (or yeast), warm almond milk, maple syrup, melted coconut oil, salt, and vanilla extract.
  2. Knead for 8-10 minutes until smooth and elastic.
  3. Cover and let rise for 2-4 hours (or overnight if using sourdough starter).

2. Shape the Buns:

  1. Preheat oven to 375°F (190°C). Line a baking pan with parchment paper.
  2. Divide the dough into 12 equal portions.
  3. Flatten each piece, add 1 teaspoon of jam in the center, then pinch the edges to seal.
  4. Place seam-side down on the baking pan, leaving space between them.

3. Bake & Serve:

  1. Bake for 18-22 minutes, or until golden brown.
  2. Let cool slightly, then dust with powdered sugar.
  3. Serve warm and enjoy!

Notes

  • Swap almond milk for oat or soy milk for different flavors.
  • Use chia seed jam for a healthier filling option.
  • Best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
