For the Pudla (Chickpea Pancake Batter):

- 1/2 cup water (adjust as needed)
- 1 tablespoon chopped cilantro
For the Filling:
- 1/2 cup chopped bell peppers (red & green)
- 1/4 cup shredded cabbage (red or green)
- 1/4 cup chopped onions
- 1/2 avocado (mashed, optional)
- 1/4 teaspoon chaat masala
- 1/4 teaspoon black salt
- 1/4 teaspoon cumin powder
For Assembling:
- 4 slices of whole wheat or multigrain bread
- 1 tablespoon vegan butter or oil

Prepare the Batter:
- In a bowl, mix chickpea flour, turmeric, red chili powder, cumin seeds, and salt.
- Gradually add water while whisking to form a smooth, lump-free batter.
- Stir in chopped cilantro and let the batter rest for 5 minutes.

Cook the Pudla:
- Heat a non-stick pan and grease it lightly with oil.
- Pour a thin layer of batter, spreading it evenly like a pancake.
- Cook for 2-3 minutes per side, flipping until golden brown.
- Repeat for additional pudlas.

Prepare the Filling:
- In a bowl, mix chopped bell peppers, cabbage, onions, mashed avocado, chaat masala, black salt, and cumin powder.
- Stir well to combine.

Assemble the Sandwich:
- Spread the veggie filling on one slice of bread.
- Place a cooked pudla over the filling and top with another slice of bread.

- Heat a pan with vegan butter or oil.
