  • 1/2 cup water (adjust as needed)
  • 1 tablespoon chopped cilantro

For the Filling:

  • 1/2 cup chopped bell peppers (red & green)
  • 1/4 cup shredded cabbage (red or green)
  • 1/4 cup chopped onions
  • 1/2 avocado (mashed, optional)
  • 1/4 teaspoon chaat masala
  • 1/4 teaspoon black salt
  • 1/4 teaspoon cumin powder

For Assembling:

  • 4 slices of whole wheat or multigrain bread
  • 1 tablespoon vegan butter or oil

Instructions

  1. Prepare the Batter:

    • In a bowl, mix chickpea flour, turmeric, red chili powder, cumin seeds, and salt.
    • Gradually add water while whisking to form a smooth, lump-free batter.
    • Stir in chopped cilantro and let the batter rest for 5 minutes.
  2. Cook the Pudla:

    • Heat a non-stick pan and grease it lightly with oil.
    • Pour a thin layer of batter, spreading it evenly like a pancake.
    • Cook for 2-3 minutes per side, flipping until golden brown.
    • Repeat for additional pudlas.
  3. Prepare the Filling:

    • In a bowl, mix chopped bell peppers, cabbage, onions, mashed avocado, chaat masala, black salt, and cumin powder.
    • Stir well to combine.
  4. Assemble the Sandwich:

    • Spread the veggie filling on one slice of bread.
    • Place a cooked pudla over the filling and top with another slice of bread.
  5. Grill or Toast:

    • Heat a pan with vegan butter or oil.
    • Grill the sandwich until crispy and golden brown on both sides.
  6. Serve & Enjoy:

    • Cut into halves and serve hot with green chutney or ketchup!
