Description

This Ube Tiramisu is a stunning twist on the classic Italian dessert, featuring rich mascarpone cream infused with sweet purple yam (ube), layered with coffee-soaked ladyfingers, and finished with a delicate coconut-ube cream. The combination of earthy ube, creamy mascarpone, and espresso makes this an unforgettable dessert!

Ube Mascarpone Cream

  • 4 tbsp purple sweet potato (or ube puree)
  • 6 large eggs, separated
  • 1 cup heavy cream
  • 16 oz mascarpone cheese
  • 14 tbsp granulated sugar
  • 1/4 tsp kosher salt
  • 1 tbsp ube extract

Coffee Mixture

  • 2 tsp instant espresso powder
  • 1 13-ounce can full-fat coconut milk

Assembly

  • 4045 ladyfingers (savoiardi) (~13.1 ounces)

Instructions

1️⃣ Prepare the Ube Mascarpone Cream

  1. In a bowl, whisk egg yolks and 8 tbsp of sugar until pale and fluffy.
  2. Add ube puree and ube extract, mixing until smooth.
  3. In a separate bowl, beat mascarpone cheese until creamy. Fold it into the ube mixture.
  4. In another bowl, beat heavy cream until stiff peaks form. Fold into the ube mascarpone mixture.

2️⃣ Make the Coffee Mixture

  1. In a bowl, mix instant espresso powder with coconut milk until dissolved.

3️⃣ Assemble the Tiramisu

  1. Dip ladyfingers into the coffee mixture (briefly, to avoid sogginess) and layer them in a 9×13-inch dish.
  2. Spread half of the ube mascarpone cream evenly over the ladyfingers.
  3. Repeat with another layer of coffee-soaked ladyfingers and top with the remaining ube cream.
  4. Smooth the top and refrigerate for at least 4 hours (preferably overnight) for the flavors to meld.

4️⃣ Serve & Enjoy

  1. Dust with ube powder or shaved white chocolate before serving.

Notes

  • If you can’t find ube extract, substitute with ½ tsp vanilla extract and increase the ube puree slightly.
