Description

For the Shrimp:

  • 1 lb shrimp, peeled & deveined (jumbo or extra-large, tail-off)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 2 tablespoons Italian seasoning, divided

For the Pasta & Sauce:

  • 12 ounces pasta (farfalle, fettuccine, or your choice)
  • 1/3 cup dry white wine (Sauvignon Blanc recommended)
  • 1/4 cup unsalted butter
  • 1 1/2 cups heavy cream
  • 1 1/2 cups parmesan cheese, finely grated
  • 2 cups baby spinach, packed
  • 1 (15 oz) can diced fire-roasted tomatoes, drained

Instructions

Step 1: Cook the Pasta

  1. Boil pasta in salted water according to package instructions.
  2. Drain and set aside.

Step 2: Cook the Shrimp

  1. In a large sauté pan, heat olive oil over medium heat.
  2. Add 1 tablespoon of Italian seasoning, swirling to combine.
  3. Cook the shrimp for 2 minutes per side, until pink and opaque.
  4. Transfer shrimp to a plate and cover with foil to keep warm.

Step 3: Make the Sauce

  1. In the same pan, pour in white wine to deglaze. Simmer for 1-2 minutes.
  2. Add butter and minced garlic, cooking until fragrant (1-2 minutes).
  3. Stir in heavy cream and the remaining 1 tablespoon Italian seasoning. Simmer for 5 minutes.
  4. Reduce heat to low, then whisk in parmesan cheese until smooth.

Step 4: Combine Everything

  1. Stir in baby spinach and fire-roasted tomatoes.
  2. Add the cooked pasta and shrimp, tossing to coat in the sauce.
  3. Serve hot and enjoy!

  • Using Frozen Shrimp? Defrost overnight in the fridge or run under cold water before cooking.
