For the Shrimp:
- 1 lb shrimp, peeled & deveined (jumbo or extra-large, tail-off)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 2 tablespoons Italian seasoning, divided
For the Pasta & Sauce:
- 12 ounces pasta (farfalle, fettuccine, or your choice)
- 1/3 cup dry white wine (Sauvignon Blanc recommended)
- 1/4 cup unsalted butter
- 1 1/2 cups heavy cream
- 1 1/2 cups parmesan cheese, finely grated
- 2 cups baby spinach, packed
- 1 (15 oz) can diced fire-roasted tomatoes, drained
Instructions
Step 1: Cook the Pasta
- Boil pasta in salted water according to package instructions.
- Drain and set aside.
Step 2: Cook the Shrimp
- In a large sauté pan, heat olive oil over medium heat.
- Add 1 tablespoon of Italian seasoning, swirling to combine.
- Cook the shrimp for 2 minutes per side, until pink and opaque.
- Transfer shrimp to a plate and cover with foil to keep warm.
Step 3: Make the Sauce
- In the same pan, pour in white wine to deglaze. Simmer for 1-2 minutes.
- Add butter and minced garlic, cooking until fragrant (1-2 minutes).
- Stir in heavy cream and the remaining 1 tablespoon Italian seasoning. Simmer for 5 minutes.
- Reduce heat to low, then whisk in parmesan cheese until smooth.
Step 4: Combine Everything
- Stir in baby spinach and fire-roasted tomatoes.
- Add the cooked pasta and shrimp, tossing to coat in the sauce.
