Description

A traditional Acadian dish made with grated potatoes, tender chicken, and a golden, crispy crust.


Ingredients

  • 5 lbs potatoes, peeled and grated
  • 4 cups chicken broth (hot)
  • 2 cups cooked chicken, shredded
  • 1 small onion, finely chopped
  • 1/2 cup salted butter, melted
  • 1 teaspoon salt

 

  • 1/2 teaspoon black pepper

Instructions

  • Prepare the Potatoes:

    • Place grated potatoes in a cheesecloth or clean kitchen towel.
    • Squeeze out as much liquid as possible.
  • Hydrate the Potatoes:

    • Gradually add hot chicken broth to the grated potatoes, stirring constantly until fully absorbed.
    • The mixture should be thick and slightly gelatinous.
  • Layer the Pie:

    • Preheat oven to 375°F (190°C) and grease a large baking dish.
    • Spread half of the potato mixture in the dish.
    • Layer with shredded chicken and chopped onions.
    • Season with salt and pepper.
    • Top with the remaining potato mixture.
  • Bake:

    • Pour melted butter evenly over the top.
    • Bake for 2-3 hours, or until the top is golden brown and crispy.

 

  • Serve & Enjoy:

    • Let rest for 10 minutes before slicing.
    • Serve hot with butter, molasses, or cranberry sauce.

Notes

    • For extra flavor, add cooked bacon bits or herbs like thyme to the filling.
    • The longer it bakes, the crispier the top will be!
    • Traditionally served with pickles or homemade chow chow for a tangy contrast.
