Description

Enjoy the authentic taste of Ka’ak Al-Quds, a traditional Palestinian sesame bread with a crisp golden crust and soft, airy inside. This Jerusalem-style street bread is best served warm with cheese, zaatar, or tea, making it a perfect addition to any meal!

Ingredients

Units Scale

For the Dough:

  • 4 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 1 1/4 cups warm water (adjust as needed)

For the Topping:

  • 1/2 cup sesame seeds
  • 1/4 cup warm water (for brushing)
  • 1 teaspoon honey or molasses (optional, for extra golden color)

Instructions

  1. Prepare the Dough:

    • In a large bowl, mix flour, yeast, sugar, and salt.
    • Gradually add warm water and olive oil, kneading until a soft, elastic dough forms.
    • Cover and let it rise for 1-2 hours, until doubled in size.
  2. Shape the Bread:

    • Divide the dough into 4-6 equal pieces.
    • Roll each piece into a long rope, then shape into an oval ring by connecting the ends.
    • Let them rest for 15 minutes while preparing the sesame topping.
  3. Coat with Sesame Seeds:

    • Mix warm water with honey or molasses (if using) for better browning.
    • Brush each dough ring with the mixture, then press into sesame seeds until fully coated.
  4. Bake:

    • Preheat the oven to 400°F (200°C).
    • Place the sesame-coated rings on a baking sheet.
    • Bake for 15-20 minutes, until golden brown and crisp.
  5. Serve & Enjoy:

    • Best enjoyed warm with cheese, zaatar, hummus, or a cup of tea!

Notes

  • For extra crispiness, spray the oven with a little water before baking to create steam.
  • Use whole wheat flour for a more rustic version.
  • Store in an airtight container for up to 3 days, or freeze for longer freshness.
