1️⃣ Prepare the Dough:

  • In a large mixing bowl, combine semolina, flour, and baking powder.
  • Add melted butter and rub the mixture between your fingers until it resembles wet sand.
  • Stir in powdered sugar, warm milk, and rose water, kneading gently until the dough is smooth and pliable.
  • Cover and let it rest for 1 hour to allow the semolina to absorb moisture.

2️⃣ Prepare the Date Filling:

  • In a small bowl, mash the pitted dates with butter and cinnamon until a soft paste-like consistency forms.
  • Add nutmeg if using, then set aside.

3️⃣ Shape the Cookies:

  • Take a small piece of dough, flatten it, and place a teaspoon of date filling in the center.
  • Seal the edges and roll into a smooth ball or oval shape.
  • Use a Maamoul mold (or press with a fork) to create decorative patterns.

4️⃣ Bake the Maamoul:

  • Preheat oven to 180°C (350°F).
  • Arrange the cookies on a lined baking sheet and bake for 15–20 minutes, until the bottoms are lightly golden (do not overbrown).

5️⃣ Garnish & Serve:

  • Let the cookies cool completely before dusting with powdered sugar.
  • Serve with Arabic coffee or tea for an authentic experience.
